Achieving a uniform dry mixture isn't as straightforward as it may seem. Ingredient characteristics, such as density and moisture content, can vary from batch to batch. Minor ingredients can be difficult to incorporate uniformly throughout a mixture. Overmixing can degrade particles. A mixture can segregate as it's discharged.
