Mixing Mechanics: The importance of mixing time

This article discusses importance of determining the proper mixing time needed to produce a good random mixture.

Depending on the mixer and the mixture’s ingredients, mixing time can be critical to finished product quality. It’s obvious when a product is undermixed: We can see lumps or uneven coloring or other telltale flaws. But it might not be as obvious when it’s overmixed. It’s not uncommon for us to think that if a product is mixed after 10 minutes, we can mix for 20 minutes to be sure that it’s well-mixed. Yet that extra mixing time can be detrimental to the product.
